For some reason (unknown to me) the Cabbage Whites have been appearing everywhere in vast numbers.

Oddly, everything else seems to be rather sparse. Coincidence? or is there some reason for this?

I have noticed the Cabbage Whites everywhere this season also and, certainly, their numbers are much higher than last summer.   I am also seeing Pink-edged Sulphurs and I saw none last summer...I think last summer was a poor season for butterflies in general.   If you don't live too far away, High Park seems to be a great place right now with numerous species.
